Easy Summer Dinners with Jodie Fitz: Grilled Salmon

Who wants to spend a perfectly pleasant summer evening in the kitchen?  If your family is like ours, quick and easy is the way we roll when it comes to summer dinners!  We asked our friend Jodie Fitz to share some of her kid-tested and approved easy summer dinners for a new recipe series!  Check  back each week for another easy dinner option!

We have been enjoying grilled salmon the last couple of weeks…well, everyone except my youngest who tolerates it :) .  I’ve really had to work at finding flavorful combinations that keep her tuned in to the ‘tolerate it’ channel when I’m serving it up (LOL).  It’s funny….my oldest would order salmon at a restaurant at age 4 & even until this day it’s one of his favorites.  My kids are all so differed; each has their own taste buds and it’s just one more thing to add to the mommy juggle list.

One way I love to serve my salmon from the grill is with a simple rub.  This recipe extremely quick and easy to make, which you know is my mantra.

Salmon Rub by Jodie Fitz

  • 6 – 7 salmon filets
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Simply add all of the dry ingredients together in a bowl.  Stir it with a fork so that all of the spices are evenly blended.  sprinkle a little bit of the rub in each side of the individual filets and rub it around so that the entire filet is covered.  I pre-heat my grill with a medium heat and then turn it down once I add the filets.  It’s a quick grill & depending on your grill and your heat, may only take 5 – 8 minutes on each side.  The true tell-all is in the meat…it shouldn’t be dry.
