Easy Summer Dinners with Jodie Fitz: Spinach and Strawberry Salad



Who wants to spend a perfectly pleasant summer evening in the kitchen?  If your family is like ours, quick and easy is the way we roll when it comes to summer dinners!  We asked our friend Jodie Fitz to share some of her kid-tested and approved easy summer dinners for a new recipe series!  Check  back each week for another easy dinner option!

Easy Summer Dinners with Jodie Fitz: Spinach and Strawberry Salad

My Mom’s Spinach and Strawberry Salad

  • 2 bunches spinach
  • 4 cups sliced strawberries
  • 1/4 teaspoon paprika
  • 2 Tablespoons sesame seeds
  • 3/4 cup Hazel Nuts, chopped
  • 1 cucumber, medium sized
  • 1/2 cup vegetable oil
  • 1 Tablespoon poppy seeds
  • 1/4 cup white wine vinegar

1. Rinse the spinach.

2. Chop it into bite sized pieces.

3. Rinse, hull & slice the strawberries.

4. Rinse and peel the cucumber.

5. Cut the cucumber so that you have bite size pieces and remove the seeds.

6. Toss the spinach, strawberries, nuts and cucumbers together.

7. Mix the dressing and toss it into the salad as well.

8. Add grilled chicken strips for an entree.


  • 1/2 cup canola oil
  • 1/4 cup white sugar
  • 1/4 cup white wine vinegar
  • 2 Tablespoons sesame seeds
  • 1 Tablespoon poppy seeds
  • 1/4 teaspoon paprika

In a medium bowl, whisk together the oil,vinegar, sugar,paprika, sesame seeds and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
