Sweet Potato Quinoa Chili


Warm up with this delicious and hearty sweet potato quinoa chili!  Not only is this recipe really easy, it tastes great and was a dish my whole family enjoyed.  Quinoa is an excellent source of protein and fiber.  I used red quinoa in this recipe, but use whatever you have!  As far as rinsing goes, it is a good practice to rinse your quinoa first to rid it of its natural bitter coating of saponins.  Enjoy!

Sweet Potato Quinoa Chili

Sweet Potato Quinoa Chili

Prep time:  15 Minutes
Cook time: 30 Minutes


  • 2 tablespoons coconut oil
  • 1 large onion diced
  • 1 medium sweet potato cubed
  • 1 yellow squash cubed
  • 4 cloves of garlic chopped
  • 2 10-oz. cans of diced tomatoes and chili’s
  • 1 can black beans drained
  • 1 can kidney beans drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1 quart vegetable broth
  • 1 cup quinoa


  1. Melt the coconut oil in a large saucepan. Add onion and sauté for about 5 minutes.
  2. Add in the diced squash and sweet potato and sauté for a couple more minutes.
  3. Add the garlic, the beans, the diced tomatoes and the spices.
  4. Pour the broth in and stir. Next add the quinoa then bring the mixture to a boil. Lower, then simmer for about 20 minutes, stirring a couple times. Add more water if you like a thinner chili.
  5. Serve and enjoy!
