From Scratch Club Academy: Review + Giveaway

Last week I attended one of From Scratch Club’s ‘academy classes’ at Brookside Museum in Ballston Spa.  These small-enrollment demo classes are taught by the awesome ladies and friends of From Scratch Club.  They offer both on-location (think: you’re friends in your kitchen!) or at community spaces like Brookside Museum in Ballston Spa or the Troy Arts Center.

The classes are $48 which is a super deal (I’ll explain more later) and includes all materials and fees plus a From Scratch Club goodie bag.  Maximum class size is 10, so you’ll really get some hands-on experience.

From Scratch Club: Home Dairy 101

As you may know by now, I am NOT a foodie.  Remember how nervous I was for Once A Month cooking and the From Scratch Club Food Swap?  Yep, I was nervous for Home Dairy too.

We walked in and she was finishing up making Ricotta cheese (which is the first thing I tried successfully to make at home by myself!).  Our class started in the kitchen where we got a hands-on look at the cheese-making process and all the tools required.
FSC contributor and mama Elizabeth Russell was our instructor and from the first minute I arrived, I knew I was in good hands!  In addition to having tons of personal experience making cheese and yogurts, Liz had attended classes with cheese experts, done lots of research and experimenting, and holds a degree in chemistry.

Once our ricotta was finished, we gathered in the classroom area to eat the ricotta, and sample Liz’s homemade butter, yogurt, granola and jam; all delicious.

Ok, we didn’t JUST eat, we also talked more about home dairy and really covered all the nitty gritty details and best practices.  We followed our comprehensive course guide; which includes most of what we discussed in class, and tons of recipes to try at home.  I was very impressed at how organized this class was.  Obviously the gals at From Scratch Club put a lot of time and effort into the details and it shows.

After our classroom discussion and question and answers, the class moved back into the kitchen.  Unfortunately I had to leave a little early, so I missed the portion on making mozzarella, but I  was excited to have already learned a ton!

I was even more excited to open my goody bag and find literally everything I needed to get started at home; cheese salt, citric acid, butter muslin, rennet, recipes, and more goodies!  (take Home Dairy 101 if you don’t know what those ingredients are!!!)

Liz was a fabulous instructor and someone I really admire.  Like all the FSC ladies, Liz obviosuly puts a lot of care and effort into what she feeds her family.

I’ve learned so much from reading the From Scratch Club blog and attending FSC events!  I’ll be hosting an FSC Academy class at MY kitchen soon and will be sure to write about it!

  14. Wow, great idea for classes. Many of them sound right up my alley but being that my kids love yogurt and many other dairy items, the dairy 101 class sounds like a good start!
